This year marked the launch of “Project X”, a secret project aimed at developing a masterpiece in the Meerendal cellar.
Meerendal’s wine maker and cellar master, Liza Goodwin has been working alongside a famous Italian Oenologist to create this unique wine at Meerendal Wine Estate.
Carefully selected Pinotage grapes were hand-picked early morning and were hung on large nets in perfect drying conditions in the cellar. After 30 days the matured grapes were taken down, crushed and carefully transported to the cellar’s traditional open concrete fermenters, of which very few remain in use around the Western Cape.
Currently this unique wine with it’s intense flavours and aromas matures in French oak barrels within the Meerendal cellar, slowly developing towards the final result of the much anticipated “Project X”.
